Remarks:  Satisfactory inspection. Repairs have been made to the ceiling in the back storage room and some repairs have been made to the flooring in between the dish room and the back kitchen area. Temperature of the food in the walk in cooler and on the service line was adequate, between 36F-42F. Food is protected during storage, all pans are covered with saran wrap in the walk in cooler . Temperature of meatballs in the steam table observed between 140F and 150F. Fresh mozzarella cheese in the cooler behind the serving line was 41F, the cooler has bins of ice on the bottom due to an issue regulating temperature. The mozzarella was the only TCS food that was observed in the unit. The owner is aware of the problem per the employees.

Remarks:  Satisfactory inspection. Temperature of food in the prep cooler on the cook line observed between 38F and 42F. Gravy being held hot in the steam table observed at 150F. Sausages being reheated on the stove observed at 199F after less than an hour. Temperature of food in the walk in cooler observed at 38F. Foods cooled from the day before observed cooled in shallow metal pans uncovered and determined to be cooled adequately. Chocolate lava cake observed stored in the freezer from approved source. Hand barriers observed as required. Hand wash sink observed free of any obstructions and stocked with soap and paper towels. Discussed testing cl2 residual process. Discussed cleaning of the slicer.
